For nearly three years, we’ve been using a Dito Sama TR260 vegetable slicer in our vegetable prep area. Building on this positive experience, we decided to invest in a second TR260, specifically for cold prep. With approximately 3,600 meals served each day, this tool is crucial for maintaining the quality of our menus while reducing the risk of musculoskeletal disorders for our staff. Additionally, we had a 60-liter planetary mixer that we’d used for over 30 years, and our pastry chefs were very pleased with it. Although it was still working well, we replaced it about six years ago with a newer stainless-steel model, which is better suited for cold environments.
