Preheat oven to 90°C.

Start whipping egg whites in DMIX or BE5 . Once frothy, gradually add sugar, whisking constantly. When mixture is firm and glossy, transfer to a piping bag.

Using piping bag, shape meringues on baking sheet lined with parchment paper.

Place in oven at 90°C for 2 hours, depending on size of meringues.
05.
Turn off oven and let meringues cool in oven as it cools. Transfer to a wire rack and cool completely before using or serving.
